JAM MANUFACTURING IN AFRICA - THE OPPORTUNITY
This project consists of setting up a unit for processing fruit into jam with a capacity of 500 kg/hour. More especially it makes it possible to add value to the fruits that do not respond to retail specifications.
Jams are made from whole fruits cooked in sugar.
Definition of products for 1000 gr of finished product:
- Jam: mixture of 350 gr minimum (general case with exception for certain fruits) of pulp or puree of one or more fruits and sugar.
- Extra jam: 450 gr minimum of fruit pulp or puree in the general case and sugar.
The production process for jam is easy to implement through the different production stages including: washing, depulping, grinding, cooking, mixing, homogenization, packaging: in glass jars (most common size: 375 gr), sterilization and labelling.
Fruit supply: It is necessary to have an abundant raw material at a competitive price.
On the other hand, the time between harvest and processing must be very short. Also, it is necessary to provide, for at least part of the supply, contracts with fruit producers.
In the case of a continuous supply and not too ripe fruit, the installation of a cold room is not mandatory.
Supply of jars: Sufficient jar stocks should be planned.
Product Quality Control: The basic equipment required is made up of a pH meter and a refractometer (control of acidity and sugar content).
Marketing: The main target should be the internal market or the markets of neighbouring countries. An export market also exists for certain specific exotic fruit jams.
The proposed jam manufacturing line allows an hourly output of 500Kg/hour.
