This project consists in setting up a small scale tomato processing unit with the objective to manufacture tomato paste, tomato puree and ketchup.
The project will consist of three main activities: the collection of tomatoes, the processing itself and the sale of the finished products. These products will be made from the fruits of tomatoes.
The finished products are:
- Tomato paste: this is made with tomatoes and salt
- Tomato puree: It is made with tomatoes and sauce
- Ketchup: it is made with tomatoes and other ingredients: sugar, salt, vinegar, modified starch, glucose, spices.
The products will be packaged in glass jars for tomato paste and in glass bottles for tomato puree and ketchup. They will be sold to targeted customers, namely large and medium-sized stores, restaurants, hotels, communities such as schools.
The technology chosen uses semi-automatic processes, the three targeted end products are distinguished above all by their concentration and the different ingredients added.
The use of tomato puree tends to spread all over the world, it is part of the composition of many dishes and sauces, improving the taste and consistency.
The tomato is a seasonal fruit, highly perishable and delicate to handle since it is relatively fragile to transport. In comparison, the concentrate, whatever its packaging, jar, tube, tin can, is practical and always available in all seasons. Making tomato paste can therefore be an excellent business opportunity.
Losses, otherwise inevitable during the high season, are significantly reduced since anything that is not sold as a fresh product can end up in concentrate, without the constraints of the perishable product.
